$100 Baked Pinto Beans

Ingredients

2 cups pinto beans
6 strips raw bacon (cut into small pieces)
2 teaspoons dry mustard
¼ cup diced onion
1 cup firmly packed Crystal Sugar Light Brown Sugar
½ cup catsup
¼ cup molasses
2 teaspoons liquid smoke

Instructions

Wash beans and soak overnight or bring beans to a boil and let soak 1 hour in the hot water. Drain and cover with fresh water. Cook until tender, about 1½ hours. Do not drain.
Add raw bacon pieces, mustard and onion. Mix with beans and simmer for ½ hour or until beans are tender.
Add the brown sugar, catsup, molasses and liquid smoke. Mix and pour into 4-quart casserole dish. Bake at 350°F for 1½ to 2 hours.
