Royal Icing


  • 6 egg whites, cold
  • 1 teaspoon lemon extract
  • 6 cups powdered CRYSTAL SUGAR®
  • 3 drops white gel food coloring (for white icing)


  1. Place egg whites in stand mixer and beat on high until stiff peaks form.
  2. Add lemon extract and powdered sugar. Blend on lowest setting for 30 seconds, or until combined.
  3. If desired, add white coloring (or any desired color) and mix well.
  4. Transfer into piping bag and decorate.

Yield: 4 cups
