- 6 egg whites, cold
- 1 teaspoon lemon extract
- 6 cups powdered CRYSTAL SUGAR®
- 3 drops white gel food coloring (for white icing)
- Place egg whites in stand mixer and beat on high until stiff peaks form.
- Add lemon extract and powdered sugar. Blend on lowest setting for 30 seconds, or until combined.
- If desired, add white coloring (or any desired color) and mix well.
- Transfer into piping bag and decorate.
Yield: 4 cups
